Spicy Corn Salsa

Graziana from Erbe in Cucina (Cooking with Herbs) is hosting both editions of Weekend Herb Blogging and this week it's all about these lovely golden cobs of sweet corn.

The dish I've made is super simple - the only cooking you'll have to do is to boil the corn and then it is just a matter of combining the remaining ingredients to suit your taste. The original recipe is from Gourmet Traveller though I have made a couple of changes.

Spicy Corn Salsa

Ingredients:
1 cob corn, boiled, kernels removed when cold
handful fresh coriander leaves, chopped
1 spring onion, finely sliced
1 small red chilli, finely chopped
1 tablespoon lemon-infused olive oil
lemon juice, to taste

Instructions:

Place the cooked corn kernels, spring onion, coriander and chilli into a bowl - toss briefly and then drizzle in the olive oil. Stir and then add lemon juice to taste.

Store in the fridge until ready to serve.
