Miso soup with Silken Tofu, Shiitake Mushrooms & Spring Onions

Miso soup with Silken Tofu, Shiitake Mushrooms & Spring Onions

1 tablespoon Hon-Dashi
3 cups water
3 spring onions, sliced finely
3 fresh shiitake mushrooms
200g silken tofu, cubed
1 tablespoon Dulse Flakes

In a saucepan, add the hon-dashi to the water and let it heat up. When the dashi has dissolved add the spring onions and shiitake. Simmer for a couple of minutes before adding the tofu and dulse flakes. Continue on a low flame until the ingredients have warmed through. Serve immediately.

This is a wonderfully refreshing soup - full of fresh flavours.

  6. This is made with Hon-Dashi is a fish bonito broth... May i make this with miso? Is the flavor between Hon-Dashi and miso pretty different? I hope I hear from you ultra soon! <3

  7. Hi Joy - I would just make it with Miso if that is what you prefer, the flavours of miso do vary depending on which type you use, it's hard to judge how different it will be. Just experiment, that's what I do!
